Astérie White
The origins of the property date back several centuries, it was once owned by the monks of the Abbey of La Sauve Majeure, one of the oldest in France. In the past, the estate was dedicated to the Virgin Mary and served as a hospital or inn for pilgrims passing through on their way to Saint Jacques de Compostelle. In the 19th century, the white wine from the property was served at the abbey's mass.

Today, owners have a particular attachment to the typicity and originality of the terroirs. Planted on a beautiful terroir of limestone with asteroid fossils, similar to that found in Saint-Émilion, this rare Bordeaux Chenin does not settle for being original. Indeed, this exceptional land gives the wine a unique depth and complexity, revealing subtle layers of minerality that blend perfectly with the fruity aromas and floral notes of Chenin Blanc.

Location
Located in the heart of the Entre-Deux-Mers region, the property benefits from an optimal geographical position. The plots are ideally exposed and spread over two perfectly sunny hills, among the highest in the Gironde (122m). It is this selection of the most beautiful terroirs of Entre-Deux-Mers that we find today in the typicality of this wine.
Terroir
Limestone Astérie and clay.
Winemaking
Low-temperature skin maceration (between 10 and 15 degrees Celsius) to gradually extract the aromas from the grapes. Then, the must is gently pressed with a pneumatic press to preserve the purity of the juice. Alcoholic fermentation takes place in stainless steel tanks, maintained between 15 and 18 degrees Celsius, thus preserving the fruity aromas of the wine through slow and controlled fermentation.
Ageing
Breeding in a 400-liter barrel with weekly stirring.
