ripe, destemming. Manual sorting of the harvest on the table.
Winemaking
Traditional vinification in temperature-controlled vats.
Maceration for about 20 days.
Ageing
Aged in vats until bottling.

Merlot : 75%
Cabernet sauvignon : 20%
Cabernet franc : 5%

Visual appearance
Deep black colour with pretty purple reflections.
At nose
The very fine open nose reveals spicy notes of ripe black fruits (blueberries, blackberries). When stirred, spicy nuances (cloves) and toasted notes develop.
On the palate
The attack is round, tasty, fruity (red fruits, cherries) with a beautiful tannic evolution. The finish is aromatic and long with spicy and fruity notes. Balance.
Food pairings
Goes very well with grilled meats, Italian cuisine, red or white meats, cheeses.
